Snow in the Forecast

My heart leapt earlier in the week to see snow in the weather forecast. Snow! Snow! Back in December, it snowed here in Pennsylvania for the first time in 600 days and my heart practically exploded in joy. Is there anything better than to see the world disappear beneath a downy-colored duvet? Is there anything better than to hear the tickle against the house? Or the silence that accompanies a snow fall?

Is there any more embracing aroma than one emanating from a kitchen on a snow day? I don't think so.

So when I saw snow in the forecast this week, the first thing I did was make my recipe list. There'd have to be a stew and a pasta, and a hearty sandwich and a healthy salad; there'd have to be a chili (to freeze); there'd have to be a longer project, and then there'd have to be a bowl-centered meal. Pretty quickly, I ran out of days. I'm ready for the Universe to send me a blizzard.

So, here it is...

One-Pan Crispy Tofu & Pearl Couscous with Harissa (NYTimes)

Spicy Peanut Stew with Ginger and Tomato (NYTimes)

Korean Barbecue-Style Impossible Meatballs (NYTimes)

Chick-Pea Parmesan Sandwiches (Project: make chickpea cutlets in Advance!)

Buffalo Cauliflower & Sausage Penne Pasta

Harissa Chick Pea Bowl with Lemony Tahini, Greens, and Potatoes

I have to say, I can't wait for this week – largely thanks to the list above – and largely due to the vegan chocolate chip waffles I just consumed. And if the snow comes or if it doesn't, you can find me in the kitchen cooking up my own storm.
